A Welcome Change in the Weather

What a difference a little cooler weather makes!

After the long, hot stretches of summer, we’ve been thoroughly enjoying the cooler mornings and more comfortable afternoons this week. There is something wonderful about walking out into the fields in the morning and feeling that unmistakable hint of fall in the air. The days are getting shorter, the light is changing, and both the farmers and the vegetables seem pretty happy about it.

We’ve also had a good week of seeding, getting more of our fall and winter crops into the ground. Spinach, carrots, kale, and all those wonderful cool-season vegetables are on our minds as we prepare for the months ahead. After struggling through the summer heat, it’s especially satisfying to plant crops that actually appreciate the cooler weather.

Of course, we’re still hoping for more rain! Irrigation can keep crops alive and growing, but there’s nothing quite like a good, soaking rain to refresh the fields. We’d be delighted to see a few days of gentle rain to help all those newly planted seeds get off to a good start.

We’re grateful for the cooler weather, for a productive week of planting, and for the promise of another season of good food. I hope you enjoy the veggie selection this week.

Thanks for trusting us to be your farmers,

Spaghetti Squash with Tomato, Basil and Garlic

Roasted spaghetti squash half topped with blistered cherry tomatoes, garlic and fresh basil

Ingredients

Prep time: 10 mins | Cook time: 35 mins | Servings: 4 people

1 spaghetti squash

1/2 pint cherry or grape tomatoes, halved

1/2 cup fresh basil, chopped

3 cloves garlic

2 tablespoons olive oil

Salt and pepper to taste

Pinch of sugar

Instructions

1. Preheat oven to 350°F.

2. Cut spaghetti squash in half lengthwise and scoop out seeds. Brush with olive oil, season with salt and pepper and place down on parchment paper on a baking pan. Put in oven for 35–40 minutes.

3. Heat olive oil in a pan over medium heat. When oil is hot, add garlic and stir for about 30 seconds to 1 minute. You don’t want the garlic to brown too much. After 1 minute add tomatoes and basil and add pinch of sugar. Stir for about 2 minutes.

4. Carefully remove spaghetti squash from oven and scrape with fork to create the “spaghetti.” Add mixture and grated parmesan to top and enjoy.
